Quit my day job after I get accepted into part-time program?

I plan on applying to booth, kellog and berkeley weekend/evening mba programs. However, I will be starting a family soon and I want to move from an engineering role into product management type role.

Can I quit my day-time job and look for internship opportunities etc while pursuing the evening/weekend MBA?
